Made Thanksgiving Leftover Grilled Cheese Sandwiches (331/366)

On this start of the new week after Thanksgiving, one of the things I am truly thankful for is finding a little while ago.  Not only did I get the idea to dry brine our turkey from that site, but I also got helpful tips on how to spatchcock the turkey and was able to make sure I could grill it properly.  And along with the dozens of recipes on the site for what to do with Thanksgiving leftovers, tonight’s dinner was from one of the simplest and most glorious applications of Thanksgiving deliciousness: Thanksgiving Leftover Grilled Cheese Sandwiches.

I started with some nice bread – artisan sweet batard for me and dutch crunch for Nick.   I melted some butter in a griddle pan and toasted the bread (on one side).

After the bread was toasted to a nice golden color, I took the pieces off the pan and put them toasted-side-up on my cutting board.  Then, on went the cheese.  Slices would have been better (the shreds fall out easily), but we had shreds to use up.

Next went our leftovers.  Stuffing on one side, sweet potato/butternut squash casserole on the other for me; mashed potatoes on one side, candied yams on the other for Nick.  After that layer went some veggies and turkey.  These were looking GOOD.

After the sandwiches were built, I put them together, melted a bit more butter, and threw built sammies back on the griddle pan.

I grilled the sandwiches for about three minutes on each side, so they could warm through.  Then, it was time to EAT!

These were so darn GOOD.  While I think my pan was too hot – my bread was a bit over-toasted on the outside and *just* warmed through on the inside – overall, these were fabulous.  I already LOVE Thanksgiving leftovers, and I was truly surprised how they got even better after putting them in a sandwich with a bit of cheese and a little more crunchy texture from the toasted bread.  If you still have leftovers from Turkey Day, DO THIS NOW!
