Made Paleo Crackers (270/366)

One of the things about eating Paleo that seems daunting to me is the shift in certain comfort foods and also ones I’ve simply become accustomed to. I have no problem eating salads with good protein and fat, and we’ve actually done well adopting the idea that a starch really isn’t needed to round out a meal; but I haven’t really gotten used to the idea of hotdogs without buns and life without crackers or other noshie-type [starchy] things yet.

That’s why this recipe I found in “Make it Paleo” appealed to me. Crackers made of almond meal and flax seed meal. Good protein, fat, Omega 3s, and the old familiarity of a cracker.

The recipe is very simple. Two cups of almond meal, one cup of flax seed meal, and two teaspoons each of cumin, garlic powder, onion powder, oregano, salt, and pepper are your dry ingredients. Top that with two eggs and two tablespoons of extra virgin olive oil, and mix.

Turn the dough out onto a cookie sheet and use a rolling pin to roll the mixture flat, a little flatter than a quarter-inch thickness (the recipe has you roll the dough between two pieces of parchment paper, but I only had foil, so I used that – a lower or non-lipped baking sheet would have been better too), then score the cracker shapes you’d like.

Bake at 350F for 15 minutes and you’ve got Paleo crackers. Awesome!

These are really good. They’re of course a lot more calorie-dense than grain crackers, but they’re also more nutritious.  And adopting a Paleo way of eating is also getting away from the “Zombie in front of the TV stuffing snacks into your mouth” way of eating, so these really aren’t to be consumed by the handful. I also think Michael Pollan‘s advice to “eat whatever junk food you like, as long as you make it yourself” is great here as well. If I want crackers, if I REALLY want them, I need to just make these myself. It’s a good (or bad?) thing they’re actually so easy to make!
