Made Caramelized Coconut Chips 288/366)

We got another great Paleo cookbook the other day called “Well Fed“, and I really love the diversity of the recipes inside. I always enjoy not only finding great new recipes for both simple and complex meals – and also just new ideas of how to serve foods that you may not have thought before.

One great example of this is the recipe I found for “Caramelized Coconut Chips” – all it is is unsweetened coconut flakes, salt and cinnamon – but I had never thought about how the lightly salty, lightly sweet combination might take on a similar taste experience to kettle corn, one of our favorite snacks before we started trying to eat more Paleo.

I got some unsweetened coconut flakes on our awesome trip to Rainbow Grocery a few days ago (I love that these are available in bulk there!) and was excited to use them in this recipe.

I heated my pan on medium-high heat for 2 minutes, and dumped my coconut flakes in. The heat not only browns the flakes nicely, but it gets the oils in the coconut heated and once the flakes are nicely browned to your liking (just a few minutes – and be sure to stir frequently!), that bit of wonderful oil helps the seasonings stick.

After the flakes were browned a bit, I took the pan off the heat and sprinkled my mixture of 1/4 tsp. cinnamon and 1/4 tsp. salt over the flakes and stirred them up.  Then you just let them cool a bit before digging in.

Delicious! The salty sweet flavor really is great – and the fantastic bit of fattiness from the coconut oil in the flakes actually makes the end result taste almost buttery!


I had a little over a cup of coconut flakes left, so I wanted to try something a little different, so I mixed up some barbecue seasoning, garlic salt, and one of the most wonderful things I the world – 4505 Chicharrones, and added that to another batch.  Oh yes.  Love.

These are such a fun snack – when they’re browned they get a great crispiness to them and the natural sweetness and fat in the coconut compliment so many different flavor combinations. I’m so happy to have found such an easy, delicious, and healthy snack!
